Ingredients

  • 1.5 cups Quinoa
  • 1 medium Eggplant
  • 1 small Cauliflower
  • 2 medium Potatoes
  • 1 medium Onion
  • 4 cloves Garlic
  • 4 cups Vegetable broth
  • 4 tbsp Olive oil
  • 1 tsp Cumin powder
  • 0.5 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 1 stick Cinnamon stick
  • 2 leaves Bay leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Soak quinoa in water for 30 minutes, then drain.
  2. 2Cut eggplant, cauliflower, and potatoes into bite-sized pieces.
  3. 3Sauté diced onions and minced garlic in olive oil until golden brown.
  4. 4Add eggplant, cauliflower, and potatoes. Cook until lightly browned.
  5. 5Stir in cumin powder, coriander powder, and turmeric powder. Cook for 5 minutes.
  6. 6Add soaked quinoa, vegetable broth, cinnamon stick, and bay leaves. Bring to a boil, then reduce heat and simmer for 30 minutes, or until quinoa is cooked through and vegetables are tender.
  7. 7Season with salt and pepper.
  8. 8In a large pot, layer the cooked quinoa and vegetables. Press down gently.
  9. 9Place a plate over the pot and carefully flip the Maqluba onto the plate.
  10. 10Serve hot.
