Saudi-Style Foul Medames (Fava Bean Stew)

A classic Saudi breakfast dish of stewed fava beans seasoned with garlic, lemon juice, and spices. Serve with warm pita bread for dipping. Dairy-free and egg-free.

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cup Water
  • 3 cloves Garlic
  • 2 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • 1 tsp Cumin
  • 0.5 tsp Chili Powder
  • 0.75 tsp Salt
  • 0.25 cup Fresh Parsley
  • 4 servings Pita Bread

Instructions

  1. 1Soak the dried fava beans in water overnight, or for at least 8 hours.
  2. 2Drain and rinse the soaked fava beans.
  3. 3Place the fava beans in a pot with 6 cups of fresh water. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the beans are very tender.
  4. 4Mash some of the beans with the back of a spoon to create a thicker consistency.
  5. 5Stir in minced garlic, lemon juice, olive oil, cumin, chili powder, and salt. Simmer for another 5 minutes.
  6. 6Garnish with fresh parsley and serve hot with warm pita bread.
