Saudi Spiced Lentil Soup (Adas)

Ingredients

  • 1 cup Red lentils
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 cloves Garlic
  • 1 teaspoon Cumin
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Coriander
  • 6 cups Vegetable broth
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh cilantro

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped onion, carrot, and celery and sauté until softened, about 5 minutes.
  3. 3Add minced garlic, cumin, turmeric, and coriander. Cook for 1 minute.
  4. 4Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes, or until lentils are tender.
  5. 5Use an immersion blender to partially blend the soup for a smoother texture (optional).
  6. 6Stir in lemon juice and season with salt and pepper to taste.
  7. 7Garnish with fresh cilantro before serving.
