Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/4 teaspoon Chili Flakes
  • 28 ounces Crushed Tomatoes
  • 1 cup Fava Beans
  • 4 large Eggs
  • 2 tablespoons Fresh Cilantro

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  2. 2Add garlic, cumin, paprika, and chili flakes. Cook for 1 minute more until fragrant.
  3. 3Stir in crushed tomatoes and fava beans. Bring to a simmer and cook for 10 minutes, stirring occasionally.
