Ingredients

  • 2 cups All-purpose flour
  • 0.75 cup Water
  • 2 tbsp Vegetable oil
  • 1 lb Ground beef
  • 1 medium Onion
  • 1 medium Tomato
  • 0.5 medium Green bell pepper
  • 0.25 cup Parsley
  • 1 tsp Cumin powder
  • 0.5 tsp Coriander powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1In a large bowl, combine the 2 cups of all-purpose flour, 0.75 cup of water, and 1 tablespoon of vegetable oil. Mix until a dough forms, then knead on a clean surface for 5-7 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes at room temperature.
  2. 2While the dough rests, prepare the filling. Heat 1 tablespoon of vegetable oil in a 10-inch skillet over medium-high heat (375°F / 190°C). Add the 1 medium onion, cut into 1/4-inch dice, and cook for 5-7 minutes until softened and golden brown.
  3. 3Add the 1 lb of ground beef to the skillet with the onions. Cook, breaking it up with a spoon, for 8-10 minutes, or until it is no longer pink. Drain off any excess fat from the skillet.
  4. 4Stir in the 1 medium tomato, cut into 1/4-inch dice, the 0.5 medium green bell pepper, cut into 1/4-inch dice, the 0.25 cup of parsley, chopped, the 1 teaspoon of cumin powder, the 0.5 teaspoon of coriander powder, the 1 teaspoon of salt, and the 0.5 teaspoon of black pepper. Cook for another 10 minutes, stirring occasionally, until the vegetables are tender.
  5. 5Divide the rested dough into 4 equal portions. On a lightly floured surface, roll each portion into a thin circle, about 8 inches in diameter.
  6. 6Spoon about one-quarter of the meat filling onto the center of each dough circle, leaving a 1-inch border. Carefully fold the edges of the dough up and over the filling, pressing to seal and create a square shape.
  7. 7Heat a griddle or a clean 10-inch skillet over medium heat (350°F / 175°C). Cook each stuffed flatbread for 5-7 minutes per side, or until the dough is golden brown and crisp, and the filling is heated through. Ensure the internal temperature of the meat reaches 165°F (74°C).
  8. 8Serve the Saudi Mutabbaq hot.
