Saudi Lentil Soup (Adas)

Ingredients

  • 1 cup Red lentils
  • 1 medium Onion
  • 1 medium Carrot
  • 1 medium Potato
  • 2 cloves Garlic
  • 1 teaspoon Cumin
  • 0.5 teaspoon Turmeric
  • 6 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Measure 1 cup of red lentils and rinse them thoroughly under cold running water until the water runs clear.
  2. 2Peel and finely chop 1 medium onion. Peel and cut 1 medium carrot into 1/2-inch cubes. Peel and cut 1 medium potato into 1/2-inch cubes. Peel and mince 2 cloves of garlic.
  3. 3Place a large heavy-bottomed pot over medium heat (350°F/175°C). Add 2 tablespoons of olive oil.
  4. 4Once the oil is shimmering, add the chopped 1 medium onion, 1/2-inch cubes of 1 medium carrot, and 1/2-inch cubes of 1 medium potato. Cook, stirring occasionally, for 5 to 7 minutes, until the vegetables begin to soften.
  5. 5Add the minced 2 cloves of garlic, 1 teaspoon of cumin, and 0.5 teaspoon of turmeric to the pot. Cook for 1 minute, stirring constantly, until the spices are fragrant.
  6. 6Add the rinsed 1 cup of red lentils and 6 cups of vegetable broth to the pot. Increase the heat to high and bring the soup to a boil.
  7. 7Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 to 40 minutes. The soup is ready when the lentils are very tender and the vegetables are easily pierced with a fork.
  8. 8Carefully use an immersion blender to blend the soup directly in the pot until it is smooth and creamy. Alternatively, transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.
  9. 9Stir in 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 2 tablespoons of lemon juice. Taste and add more salt, pepper, or lemon juice if needed.
