Saudi Jareesh (Cracked Wheat Soup)

Ingredients

  • 1 cup Cracked wheat (Jareesh)
  • 0.75 lb Beef cubes
  • 1 medium Onion
  • 1 medium Carrots
  • 2 tbsp Tomato paste
  • 6 cups Vegetable broth
  • 2 tbsp Ghee
  • 1 tsp Cumin powder
  • 0.5 tsp Coriander powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Soak cracked wheat in water for at least 1 hour.
  2. 2Sauté diced onions and carrots in ghee until softened.
  3. 3Add beef cubes and brown on all sides.
  4. 4Stir in tomato paste, cumin powder, and coriander powder. Cook for 5 minutes.
  5. 5Add soaked cracked wheat and vegetable broth. Bring to a boil, then reduce heat and simmer for 1 hour, or until cracked wheat is cooked through.
  6. 6Season with salt and pepper before serving.
