Saudi Dairy-Free Masoub

A traditional Saudi breakfast dish made with mashed bananas, bread, dates, and honey. This version is completely dairy-free.

Ingredients

  • 3 Ripe Bananas
  • 2 slices Whole Wheat Bread
  • 6 Medjool Dates
  • 2 tbsp Vegan Ghee
  • 2 tbsp Honey
  • 1/2 tsp Black Seed (Nigella Sativa)

Instructions

  1. 1Place the 2 slices of whole wheat bread in a toaster and toast them until they are lightly golden brown on both sides, about 2-3 minutes.
  2. 2While the bread is toasting, peel and mash the 3 ripe bananas in a medium-sized bowl using a fork until they are mostly smooth with a few small lumps remaining.
  3. 3Once the bread is toasted, tear the 2 slices of whole wheat bread into small, bite-sized pieces and add them directly into the bowl with the mashed bananas.
  4. 4Remove the pits from the 6 Medjool dates, then chop them into small pieces and add the chopped dates to the banana and bread mixture in the bowl.
  5. 5Place a small non-stick pan over medium heat (350°F / 175°C) and add the 2 tablespoons of vegan ghee. Heat until the vegan ghee is fully melted and shimmering, about 1-2 minutes.
  6. 6Pour the melted 2 tablespoons of vegan ghee over the mixture of mashed bananas, torn bread, and chopped dates in the bowl. Stir everything together until well combined.
  7. 7Drizzle the 2 tablespoons of honey over the mixture and sprinkle the 1/2 teaspoon of black seed evenly on top.
  8. 8Serve the Saudi Dairy-Free Masoub immediately while it is warm.
