Saudi Chicken Kabsa

Ingredients

  • 1.5 lb Chicken pieces
  • 2 cups Basmati rice
  • 1 medium Onion
  • 2 medium Tomatoes
  • 1 medium Green bell pepper
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Kabsa spice mix
  • 4 whole Cardamom pods
  • 4 whole Cloves
  • 1 stick Cinnamon stick
  • 2 tablespoons Vegetable oil
  • 4 cups Chicken broth
  • 1/4 cup Raisins
  • 1/4 cup Almonds

Instructions

  1. 1Heat vegetable oil in a large pot over medium heat.
  2. 2Add chopped onion and sauté until golden brown.
  3. 3Add minced garlic and grated ginger and sauté for another minute.
  4. 4Add diced tomatoes, green bell pepper, and kabsa spice mix. Cook for 5 minutes.
  5. 5Add chicken pieces and brown on all sides.
  6. 6Add cardamom pods, cloves, and cinnamon stick.
  7. 7Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes or until chicken is cooked through.
  8. 8Remove chicken from the pot and set aside. Shred the chicken.
  9. 9Add basmati rice to the pot and stir well. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  10. 10Fluff the rice with a fork and mix in the shredded chicken.
  11. 11Garnish with raisins and almonds before serving.
