Saskatoon Berry Bannock (SHELLFISH-FREE)

Ingredients

  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Saskatoon berries
  • 3/4 cup Milk
  • 1/4 cup Butter

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, whisk together the 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt until they are well combined.
  3. 3Add the 1 cup of Saskatoon berries to the dry ingredients and stir them in.
  4. 4Add the 1/4 cup of butter to the bowl. Use a pastry blender or your fingertips to cut the butter into the flour mixture until it looks like coarse crumbs.
  5. 5Gradually add the 3/4 cup of milk to the mixture. Stir gently until everything is just combined into a dough. Be careful not to overmix.
  6. 6Turn the dough out onto a clean surface that has been lightly dusted with a little flour. Gently knead the dough a few times, just to bring it together.
  7. 7Pat the dough into a circle that is about 1 inch thick.
  8. 8Cut the dough circle into 8 equal wedges.
  9. 9Place the 8 wedges onto a baking sheet. Bake for 15-20 minutes, or until the wedges are golden brown on top and cooked through.
  10. 10Serve the Saskatoon Berry Bannock warm.
