Sancocho de Gallina (Chicken Stew)

Ingredients

  • 3 lbs Whole chicken
  • 10 cups Water
  • 1 green Plantain
  • 1 lb Yuca (cassava)
  • 1 lb Potato
  • 2 ears Corn on the cob
  • 1 medium Onion
  • 4 cloves Garlic
  • 0.5 cup Cilantro
  • 2 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1In a large pot, combine chicken pieces and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
  2. 2Add plantain, yuca, and potato to the pot. Cook for another 30 minutes, or until vegetables are tender.
  3. 3Add corn on the cob, onion, and garlic. Cook for another 15 minutes.
  4. 4Season with salt and pepper.
  5. 5Stir in cilantro and serve hot.
