Ingredients

  • 2 lbs Potatoes
  • 6-8 number Red chilies
  • 4 cloves Garlic
  • 4 number Shallots
  • 3 number Candlenuts (kemiri)
  • 2 tablespoons Coconut sugar
  • 1 tablespoon Tamarind paste
  • 2 number Bay leaves
  • 4 tablespoons Vegetable oil
  • 1 teaspoon Salt

Instructions

  1. 1Peel the 2 lbs Potatoes and cut them into 1-inch cubes. Heat 4 tablespoons of vegetable oil in a large skillet or wok over medium-high heat until it shimmers, about 350°F (175°C). Carefully add the potato cubes to the hot oil and fry for 10-15 minutes, or until they are golden brown and crispy. Use a slotted spoon to remove the potatoes from the oil and place them on a plate lined with paper towels to drain. Set the fried potatoes aside.
  2. 2While the potatoes are frying, prepare the spice paste. Finely chop the 6-8 number Red chilies (removing seeds if you prefer less heat), 4 cloves Garlic, 4 number Shallots, and 3 number Candlenuts. You can use a food processor or a mortar and pestle to grind these ingredients into a smooth paste. If using a food processor, you may need to add a teaspoon of water to help it blend.
  3. 3In a clean large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat, about 325°F (160°C). Add the ground spice paste and the 2 number Bay leaves to the hot oil. Cook, stirring constantly, for 5-7 minutes, or until the paste is very fragrant and the oil starts to separate from the paste, indicating it is well-cooked.
  4. 4Stir the 1 tablespoon Tamarind paste and 2 tablespoons Coconut sugar into the spice paste. Continue to cook, stirring, for another 1-2 minutes until the coconut sugar has dissolved and the sauce has thickened slightly.
  5. 5Add the reserved crispy fried potatoes to the skillet with the sambal sauce. Toss everything together gently but thoroughly, ensuring all the potato cubes are evenly coated with the sauce. Cook for 2-3 minutes, allowing the potatoes to absorb some of the sauce.
  6. 6Stir in the 1 teaspoon Salt. Taste the sambal goreng kentang and add a little more salt if needed. Serve the Sambal Goreng Kentang warm as a side dish.
