Ingredients

  • 3 cup Cooked chicken breast, shredded
  • 1 cup Carrot, grated
  • 1/2 cup Celery, finely chopped
  • 1/2 cup Green peas, cooked
  • 1/4 cup Raisins
  • 1 cup Mayonnaise (egg-free)
  • 2 tbsp Lime juice
  • 1 cup Potato sticks, for topping
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1In a large bowl, combine the 3 cups of cooked chicken breast, shredded, the 1 cup of grated carrot, the 1/2 cup of finely chopped celery, the 1/2 cup of cooked green peas, and the 1/4 cup of raisins.
  2. 2In a separate medium bowl, whisk together the 1 cup of egg-free mayonnaise and the 2 tablespoons of lime juice until smooth.
  3. 3Pour the mayonnaise dressing into the large bowl with the chicken and vegetable mixture. Stir everything together until all ingredients are evenly coated.
  4. 4Season the salad with the 1 teaspoon of salt and the 1/2 teaspoon of black pepper. Stir again to distribute the seasonings.
  5. 5Cover the bowl tightly with plastic wrap and place it in the refrigerator to chill for at least 30 minutes. Chilling allows the flavors to meld together.
  6. 6Just before serving, top the chilled salpicão with the 1 cup of potato sticks for a crunchy texture.
