Ingredients

  • 4 6 oz Salmon fillets
  • 2 tablespoons White miso paste
  • 2 tablespoons Mirin (sweet rice wine)
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sake (rice wine)
  • 1 teaspoon Brown sugar
  • 1 lb Asparagus
  • 1 teaspoon Sesame oil

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a small bowl, whisk together the 2 tablespoons of white miso paste, 2 tablespoons of mirin, 1 tablespoon of soy sauce, 1 tablespoon of sake, and 1 teaspoon of brown sugar until smooth. This is your miso glaze.
  3. 3Place the 4 6 oz salmon fillets on a baking sheet lined with parchment paper. Use a brush to generously coat the top of each salmon fillet with the miso glaze.
  4. 4Arrange the 1 lb of asparagus around the salmon fillets on the same baking sheet. Drizzle the asparagus with the 1 teaspoon of sesame oil.
  5. 5Bake for 12 to 15 minutes. The salmon is done when it is opaque and flakes easily when gently pressed with a fork, or when an instant-read thermometer inserted into the thickest part registers 145°F (63°C). The asparagus should be tender-crisp.
  6. 6Serve the salmon and asparagus immediately.
