Ingredients

  • 12 oz Canned tuna in olive oil
  • 1 lb Potatoes
  • 8 oz Green beans
  • 1 pint Cherry tomatoes
  • 0.5 cup Black olives
  • 0.25 cup Red onion
  • 4 large Hard-boiled eggs
  • 0.25 cup Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Instructions

  1. 1Boil potatoes until tender, about 15 minutes. Let cool slightly, then slice.
  2. 2Steam or boil green beans until tender-crisp, about 5 minutes. Plunge into ice water to stop cooking, then drain.
  3. 3In a large bowl, combine potatoes, green beans, tuna (drained), cherry tomatoes (halved), olives, red onion, and hard-boiled eggs (quartered).
  4. 4In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  5. 5Pour dressing over salad and toss gently to combine. Serve immediately.
