Russian Creamy Semolina Porridge (Mannaya Kasha)

Ingredients

  • 2 cups Milk
  • 1/4 cup Semolina
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1 tbsp Butter
  • 1/2 cup Berries (optional)

Instructions

  1. 1Place a medium saucepan on the stove over medium heat (350°F / 175°C). Pour in the 2 cups of milk and heat until small bubbles form around the edges and it just begins to steam, about 3-5 minutes. Do not let it boil.
  2. 2While whisking constantly with a whisk, slowly pour in the 1/4 cup of semolina in a thin stream. Continue whisking for 1 minute to ensure there are no lumps.
  3. 3Add the 2 tablespoons of sugar and the 1/4 teaspoon of salt to the saucepan. Stir to combine.
  4. 4Reduce the heat to low (200°F / 95°C). Cook for 5-7 minutes, stirring occasionally, until the porridge has thickened to your desired creamy consistency. It should coat the back of a spoon.
  5. 5Remove the saucepan from the heat. Stir in the 1 tablespoon of butter until it is fully melted and incorporated into the porridge.
  6. 6Serve the porridge hot. If desired, top with the 1/2 cup of berries.
