Ingredients

  • 1.5 lb Russet Potatoes
  • 1/2 medium Onion
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 oz Smoked Salmon
  • 2 tbsp Fresh Dill
  • 4 Lemon Wedges

Instructions

  1. 1Peel the 1.5 lb Russet Potatoes. Coarsely grate them into a bowl. Place a clean kitchen towel over the grated potatoes and squeeze out as much excess moisture as possible.
  2. 2Finely chop the 1/2 medium Onion.
  3. 3Heat the 2 tbsp Olive Oil in a 12-inch non-stick skillet over medium heat (about 350°F / 175°C).
  4. 4Add the squeezed grated potatoes and the chopped onion to the hot skillet. Season with the 1/2 tsp Salt and 1/4 tsp Black Pepper. Press down firmly with a spatula to form one large pancake shape.
  5. 5Cook for 10-12 minutes without disturbing. You are looking for the bottom to be golden brown and crispy. Carefully flip the large potato pancake using a large spatula and cook for another 10-12 minutes on the second side, until golden brown and crispy.
  6. 6Slide the finished rösti onto a cutting board. Cut it into 4 wedges.
  7. 7Divide the 4 oz Smoked Salmon among the rösti wedges. Sprinkle the 2 tbsp Fresh Dill over the top.
  8. 8Serve immediately with the 4 Lemon Wedges.
