Ingredients

  • 2 cups All-Purpose Flour
  • 1 teaspoon Salt
  • 0.5 cup Vegetable Oil
  • 0.75 cup Water
  • 1 can Chickpeas
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 medium Tomato
  • 2 tablespoons Curry Powder
  • 1 cup Coconut Milk
  • 0.5 cup Vegetable Broth

Instructions

  1. 1In a bowl, combine flour and salt. Add water and knead until a soft dough forms. Divide the dough into small balls, coat with oil, and let rest for at least 1 hour.
  2. 2To make the roti canai, flatten a dough ball into a thin circle. Fold the edges to form a square, then cook on a hot griddle with oil until golden brown and flaky.
  3. 3For the chickpea curry, sauté onion, garlic, and ginger in oil until fragrant. Add diced tomato and curry powder, and cook for a few minutes.
  4. 4Add chickpeas, coconut milk, and vegetable broth. Simmer for 15 minutes, or until the curry thickens.
  5. 5Serve the roti canai with the chickpea curry.
