Roasted Pão de Queijo Breakfast Bake

A savory, cheesy breakfast bake inspired by Brazilian cheese bread, made with tapioca flour and lots of cheese, then roasted to golden perfection with eggs and sausage mixed in.

Ingredients

  • 2 cups Tapioca Flour
  • 1 cup Milk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 cups Shredded Minas Cheese (or Mozzarella)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Cooked Brazilian Sausage (Linguiça), chopped
  • 6 large Eggs (for baking in)
  • 2 tbsp Chopped Parsley

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, whisk together the 2 cups of Tapioca Flour, 1 cup of Milk, and 1/2 cup of Vegetable Oil until the mixture is smooth.
  3. 3Add the 2 large Eggs, 2 cups of Shredded Minas Cheese (or Mozzarella), 1 tsp of Salt, and 1/2 tsp of Black Pepper to the bowl. Mix thoroughly until all ingredients are well combined.
  4. 4Stir in the 1 cup of Cooked Brazilian Sausage (Linguiça), which has been chopped. Pour the entire mixture into a 9x13 inch baking dish.
  5. 5Carefully crack the 6 large Eggs directly on top of the mixture in the baking dish, spacing them evenly apart.
  6. 6Bake in the preheated oven at 400°F (200°C) for 30-35 minutes. The bake is ready when the pão de queijo is golden brown and the 6 large Eggs are cooked to your desired firmness.
  7. 7Remove the baking dish from the oven. Garnish the bake with the 2 tbsp of Chopped Parsley and serve hot.
