Roasted Okra with Lemon and Garlic (Bamia)

Ingredients

  • 1 pound Fresh okra, trimmed
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Adjust an oven rack to the middle position. Preheat your oven to 400°F (200°C).
  2. 2In a large mixing bowl, combine the 1 pound of trimmed fresh okra, 2 tablespoons of olive oil, 3 cloves of minced garlic, 2 tablespoons of lemon juice, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss everything together gently until the okra is evenly coated.
  3. 3Spread the seasoned okra in a single layer on a large baking sheet. Make sure the okra pieces are not overlapping, as this helps them roast evenly.
  4. 4Place the baking sheet in the preheated 400°F (200°C) oven and roast for 20 to 25 minutes. After 10-12 minutes, carefully remove the baking sheet from the oven and use a spatula to turn the okra pieces over. Return the baking sheet to the oven and continue roasting until the okra is tender when pierced with a fork and has slightly browned edges.
  5. 5Carefully remove the roasted okra from the oven. Serve the Roasted Okra with Lemon and Garlic warm.
