Ingredients

  • 4 cups Cooked rice
  • 1 lb Plant-based chicken pieces
  • 1 can (13.5 oz) Coconut milk
  • 2 tsp Curry powder
  • 1 cup Canned pineapple chunks, drained
  • 1 cup Canned mandarin oranges, drained
  • 1/2 cup Raisins
  • 1/4 cup Almonds, slivered
  • 1 tbsp Olive oil
  • 1/2 tsp Salt

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add the plant-based chicken pieces and cook until heated through and lightly browned.
  2. 2Stir in the curry powder and cook for another minute.
  3. 3Add the coconut milk, pineapple chunks, mandarin oranges, and raisins. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
  4. 4Stir in the cooked rice and salt.
  5. 5Serve hot, garnished with slivered almonds.
