Rice Noodle Rolls (Cheung Fun)

Ingredients

  • 1 cup Rice Flour
  • 1/4 cup Tapioca Starch
  • 1 1/2 cups Water
  • 1 tbsp Vegetable Oil
  • 4 tbsp Sweet Soy Sauce
  • 2 tsp Sesame Seeds
  • 2 stalks Scallions

Instructions

  1. 1In a bowl, whisk together rice flour, tapioca starch, water, and vegetable oil until smooth.
  2. 2Lightly grease a steamer tray or shallow dish with vegetable oil.
  3. 3Pour a thin layer of the rice flour mixture onto the tray, just enough to cover the bottom.
  4. 4Steam the tray over boiling water for 2-3 minutes, or until the rice noodle is cooked through and translucent.
  5. 5Carefully remove the tray from the steamer and use a spatula to roll up the rice noodle into a roll.
  6. 6Repeat with the remaining batter.
  7. 7Cut the rice noodle rolls into bite-sized pieces and arrange on a plate.
  8. 8Drizzle with sweet soy sauce and sprinkle with sesame seeds and chopped scallions. Serve immediately.
