Ingredients

  • 2 cups Cooked Rice
  • 1 pound Ground Beef
  • 0.5 medium Onion
  • 0.25 cup Fresh Parsley
  • 1 large Egg
  • 0.5 teaspoon Turmeric
  • 0.5 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. 1In a large bowl, combine the 2 cups of cooked rice, 1 pound of ground beef, 0.5 medium onion (finely grated), 0.25 cup of fresh parsley (chopped), 1 large egg, 0.5 teaspoon of turmeric, 0.5 teaspoon of cumin, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.
  2. 2Use your hands to thoroughly mix all the ingredients together until they are well combined.
  3. 3Shape the mixture into 8-10 small oval-shaped kofta, about 2 inches long.
  4. 4Thread the kofta onto skewers, placing them about 1 inch apart.
  5. 5Heat the 2 tablespoons of olive oil in a 12-inch skillet over medium-high heat, approximately 400°F (200°C).
  6. 6Carefully place the kofta skewers in the hot skillet, ensuring not to overcrowd the pan. Cook for 15-20 minutes, turning the skewers occasionally, until the kofta are browned on all sides and cooked through. The internal temperature should reach 160°F (71°C).
  7. 7Alternatively, you can grill the kofta skewers over medium-high heat for 15-20 minutes, turning occasionally, until browned and cooked through to an internal temperature of 160°F (71°C).
