- 2Place a large, heavy-bottomed pot or Dutch oven on the stove over medium heat. Add the 1/2 cup olive oil. Once the oil is shimmering, add the 1 large onion, 2 medium carrots, and 2 celery stalks. Cook, stirring occasionally, until the vegetables are softened, about 5 to 7 minutes. Add the 4 cloves of garlic and cook for 1 more minute until fragrant, being careful not to burn it.
- 3Add the drained chickpeas to the pot. Pour in the 8 cups of vegetable broth. Add the 1 bay leaf and 1 tsp dried oregano. Increase the heat to medium-high and bring the liquid to a boil.
