- 2In a large, heavy-bottomed pot or Dutch oven, combine the 2 lbs of cubed beef chuck, 4 cups of coconut milk, the prepared spice paste, 2 bruised stalks of lemongrass, 2 inches of bruised galangal, 4 lime leaves, 1 cinnamon stick, 2 star anise, 2 tablespoons of ground coriander, 1 teaspoon of turmeric powder, 2 teaspoons of salt, and 1 teaspoon of sugar.
