- 1The day before you plan to cook, place the 1 lb dried red kidney beans in a large bowl and cover them with plenty of cold water. Let them soak overnight. The next day, drain the beans and rinse them thoroughly under cold running water.
- 2Place a large, heavy-bottomed pot or Dutch oven on the stove over medium heat (350°F / 175°C). Add the 2 tbsp olive oil to the pot. Once the oil is shimmering, add the 1 large onion, diced; the 1 large bell pepper, diced; and the 3 stalks celery, diced. Cook, stirring often, until the vegetables are softened, about 5 to 7 minutes.
