Ingredients

  • 1 cup Quinoa
  • 2 cups Coconut Milk
  • 1 large Mango
  • 1/4 cup Toasted Coconut Flakes
  • 2 tablespoons Maple Syrup

Instructions

  1. 1Place the 1 cup of quinoa in a fine-mesh sieve and rinse it thoroughly under cold running water for about 1 minute. This removes any bitterness. Drain well.
  2. 2In a medium saucepan (about 2-quart capacity), combine the rinsed 1 cup of quinoa and the 2 cups of coconut milk. Stir them together.
  3. 3Place the saucepan over medium-high heat and bring the mixture to a rolling boil. Once boiling, immediately reduce the heat to low, cover the saucepan tightly with a lid, and let it simmer for 15 to 20 minutes. Cook until all the coconut milk has been absorbed by the quinoa and the quinoa grains are tender and have a fluffy appearance.
  4. 4Remove the saucepan from the heat. Stir in the 2 tablespoons of maple syrup until it is fully combined with the cooked quinoa.
  5. 5Serve the warm quinoa immediately. Spoon it into bowls and top each serving with the diced 1 large mango and the 1/4 cup of toasted coconut flakes.
