Ingredients

  • 1/2 cup Quinoa
  • 1 cup Water
  • 1 cup Mixed Berries (Strawberries, Blueberries, Raspberries)
  • 2 tablespoons Sunflower Seeds
  • 1 tablespoon Maple Syrup
  • 1/4 teaspoon Cinnamon

Instructions

  1. 1Place the 1/2 cup quinoa in a fine-mesh sieve and rinse it under cold running water for about 30 seconds, until the water runs clear. This removes any bitterness.
  2. 2Combine the rinsed 1/2 cup quinoa and 1 cup water in a medium saucepan. Bring the mixture to a rolling boil over medium-high heat, about 3-5 minutes.
  3. 3Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes. Cook until all the 1 cup of water has been absorbed by the quinoa. You can check by tilting the pan; if there's no visible water, it's ready.
  4. 4Remove the saucepan from the heat and let it sit, covered, for 5 minutes. Then, uncover and gently fluff the cooked 1/2 cup quinoa with a fork.
  5. 5Divide the fluffed quinoa evenly between two serving bowls.
  6. 6Top each bowl with 1/2 cup of the mixed berries and 1 tablespoon of sunflower seeds.
  7. 7Drizzle 1/2 tablespoon of maple syrup over each bowl and sprinkle with 1/8 teaspoon of cinnamon.
  8. 8Serve immediately.
