Ingredients

  • 2 cups Rice flour
  • 2 tablespoons Baking powder
  • 3/4 cup Sugar
  • 1/2 teaspoon Salt
  • 2 cups Water
  • 1/2 cup Coconut milk
  • 1/2 cup Cheese, cubed (optional)

Instructions

  1. 1In a bowl, combine the rice flour, baking powder, sugar, and salt.
  2. 2Gradually add the water and coconut milk, mixing until smooth.
  3. 3Grease small muffin molds or ramekins.
  4. 4Pour the batter into the molds, filling about 3/4 full.
  5. 5Top with cubed cheese if desired.
  6. 6Steam for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Let cool slightly before removing from the molds. Serve warm or at room temperature.
