Ingredients

  • 1/2 cup Basmati Rice
  • 4 cups Coconut Milk
  • 1/3 cup Sugar
  • 4 Cardamom Pods
  • 1/4 cup Raisins
  • 2 tablespoons Cashews

Instructions

  1. 1Rinse the basmati rice under cold water until the water runs clear.
  2. 2In a heavy-bottomed pot, combine rinsed rice and coconut milk.
  3. 3Bring the mixture to a boil over medium heat, then reduce heat to low, add cardamom pods.
  4. 4Simmer gently, stirring occasionally, until the rice is cooked and the pudding has thickened (about 30-40 minutes).
  5. 5Stir in sugar, raisins, and cashews. Cook for another 5 minutes, stirring constantly.
  6. 6Remove from heat and let cool slightly before serving. Can be served warm or cold.
