Pulut Inti (Glutinous Rice with Sweet Coconut Topping)

A classic Malaysian snack made with steamed glutinous rice and a sweet coconut filling. This version is soy-free.

Ingredients

  • 2 cups Glutinous rice
  • 1 cup Coconut milk
  • 1/2 tsp Salt
  • 2 cups Grated coconut
  • 1/2 cup Palm sugar
  • 2 leaves Pandan leaves
  • 1/4 cup Water

Instructions

  1. 1Rinse the glutinous rice and soak it in water for at least 4 hours, or overnight.
  2. 2Drain the rice and steam it for 20-25 minutes, or until cooked. Mix with coconut milk and salt. Set aside.
  3. 3In a pan, combine the grated coconut, palm sugar, pandan leaves, and water. Cook over medium heat, stirring constantly, until the sugar is melted and the mixture is slightly thickened.
  4. 4To assemble, shape the glutinous rice into small mounds and top with the sweet coconut filling. Serve immediately.
