Puerto Rican Arroz con Gandules (Pigeon Peas and Rice) - Peanut-Free

Ingredients

  • 2 cups Long-grain rice
  • 1 can Pigeon peas (gandules)
  • 4 tbsp Sofrito
  • 0.5 cup Smoked ham (optional)
  • 0.5 cup Tomato sauce
  • 3 cups Chicken broth
  • 2 tbsp Olive oil
  • 1 tsp Adobo seasoning
  • 1 packet Sazón seasoning
  • 1 leaf Bay leaf

Instructions

  1. 1Rinse rice until water runs clear.
  2. 2In a large pot or caldero, heat olive oil over medium heat.
  3. 3Add sofrito and smoked ham (if using). Sauté for 2-3 minutes.
  4. 4Stir in tomato sauce, adobo seasoning, and sazón seasoning. Cook for another minute.
  5. 5Add rice and pigeon peas. Stir to combine.
  6. 6Pour in chicken broth and add bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until rice is cooked and liquid is absorbed.
  7. 7Remove from heat and let stand for 5 minutes before fluffing with a fork. Discard bay leaf before serving.
