Ingredients

  • 2 teaspoons Agar-Agar
  • 1/2 cup Water
  • 1 cup Sugar
  • 1/2 cup Unsalted Butter
  • 1/2 cup Condensed Milk
  • 1 teaspoon Vanilla Extract
  • 4 oz Dark Chocolate
  • 1 teaspoon Sunflower Oil

Instructions

  1. 1In a small bowl, combine the 2 teaspoons of Agar-Agar with 1/4 cup of Water. Let this sit for 30 minutes to soften.
  2. 2In a medium saucepan, combine the remaining 1/4 cup of Water and the 1 cup of Sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Bring this mixture to a boil and cook for 2 minutes.
  3. 3Carefully add the softened agar-agar mixture to the boiling sugar syrup. Cook for 5 to 7 minutes, stirring constantly, until the agar-agar is completely dissolved. The mixture should be clear. Remove the saucepan from the heat and let it cool for 5 minutes.
  4. 4In a separate medium bowl, beat the 1/2 cup of Unsalted Butter with the 1/2 cup of Condensed Milk until the mixture is light and fluffy. This should take about 2-3 minutes with an electric mixer.
  5. 5Slowly pour the warm agar-agar syrup into the butter and condensed milk mixture while whisking constantly. Continue whisking until everything is thoroughly combined. Stir in the 1 teaspoon of Vanilla Extract.
  6. 6Pour the mixture into a parchment paper-lined baking sheet, approximately 8x8 inches. Place the baking sheet in the refrigerator for at least 1 hour, or until the mixture is firm to the touch.
  7. 7While the candy is chilling, prepare the chocolate coating. In a heatproof bowl set over a saucepan of simmering water (or in the microwave using 30-second intervals), melt the 4 oz of Dark Chocolate with the 1 teaspoon of Sunflower Oil. Stir until the chocolate is completely smooth and melted.
  8. 8Once the candy is firm, cut it into bite-sized pieces, about 1-inch squares. Dip each piece into the melted dark chocolate, ensuring it is fully coated. Place the chocolate-covered pieces back onto a parchment-lined baking sheet.
  9. 9Refrigerate the chocolate-covered candies for at least 30 minutes, or until the chocolate coating is completely set.
