Ingredients

  • 2 large Sweet potatoes, peeled and cut into fries
  • 2 tablespoons Olive oil
  • 1 tablespoon Cornstarch
  • 1 package Dairy-free gravy mix
  • 1 cup Dairy-free cheese curds
  • 2 cups Vegetable broth

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, combine the 2 large sweet potatoes (peeled and cut into fries) with the 2 tablespoons of olive oil and the 1 tablespoon of cornstarch. Toss until the fries are evenly coated. Spread the coated fries in a single layer on a baking sheet.
  3. 3Bake the sweet potato fries in the preheated oven for 25-30 minutes. Halfway through the baking time, use a spatula to flip the fries. The fries are done when they are golden brown and crispy to the touch.
  4. 4While the fries are baking, prepare the gravy. In a saucepan, whisk together the 1 package of dairy-free gravy mix and the 2 cups of vegetable broth. Heat this mixture over medium heat, stirring constantly, until the gravy thickens. This process should take about 5-10 minutes.
  5. 5Once the sweet potato fries are golden brown and crispy, remove the baking sheet from the oven. Arrange the baked sweet potato fries on a serving platter. Scatter the 1 cup of dairy-free cheese curds evenly over the hot fries, then pour the hot dairy-free gravy over the cheese curds and fries. Serve immediately.
