Ingredients

  • 3 cups All-purpose flour
  • 1 Egg
  • 1 cup Water
  • 2 lbs Potatoes, peeled and boiled
  • 1 cup Mushrooms, finely chopped
  • 1/2 cup Onion, finely chopped
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 cup Sour cream (optional)

Instructions

  1. 1Prepare the dough: In a large bowl, mix together the flour, egg, and water until a smooth dough forms. Knead for 5-7 minutes. Cover and let rest for 30 minutes.
  2. 2Prepare the filling: Mash the boiled potatoes. In a skillet, melt the butter over medium heat. Add the onion and mushrooms and cook until softened, about 5-7 minutes. Add the cooked mushroom mixture to the mashed potatoes. Season with salt and pepper. Mix well.
  3. 3Assemble the vareniki: Roll out the dough thinly. Use a cookie cutter or glass to cut out circles. Place a spoonful of filling in the center of each circle. Fold the dough over and pinch the edges to seal.
  4. 4Cook the vareniki: Bring a large pot of salted water to a boil. Add the vareniki and cook until they float to the surface and are cooked through, about 5-7 minutes.
  5. 5Serve hot with sour cream, if desired.
