Portuguese Shrimp and Zucchini Noodles

Ingredients

  • 1 pound Shrimp
  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 3 tablespoons Lemon juice
  • 1/4 teaspoon Red pepper flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Prepare the 1 pound of shrimp by peeling and deveining them. Prepare the 4 medium zucchini by using a spiralizer to create zucchini noodles.
  2. 2Heat 2 tablespoons of olive oil in a large skillet over medium heat, which is about 350°F (175°C).
  3. 3Add the 4 cloves of minced garlic and 1/4 teaspoon of red pepper flakes to the hot skillet. Cook, stirring constantly, until the garlic is fragrant, which should take about 1 minute. Be careful not to let the garlic burn.
  4. 4Add the prepared 1 pound of shrimp to the skillet in a single layer. Cook for 3-5 minutes, turning them halfway through, until the shrimp are pink and opaque and reach an internal temperature of 145°F (63°C).
  5. 5Add the zucchini noodles and 3 tablespoons of lemon juice to the skillet. Cook, tossing gently, for 2-3 minutes until the zucchini noodles are tender-crisp. You want them to still have a slight bite.
  6. 6Remove the skillet from the heat. Season the dish with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  7. 7Serve the Portuguese Shrimp and Zucchini Noodles immediately.
