Portuguese Shrimp and Cauliflower Rice

Ingredients

  • 1 lb Shrimp (peeled and deveined)
  • 4 cups Cauliflower rice
  • 2 tbsp Olive oil
  • 1 medium Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 medium Bell pepper (red, diced)
  • 2 tbsp Tomato paste
  • 1 cup Chicken broth (dairy-free)
  • 1 tsp Smoked paprika
  • 1 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh cilantro (chopped)

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add onion and bell pepper and cook until softened, about 5 minutes.
  3. 3Add garlic and cook for another minute until fragrant.
  4. 4Stir in tomato paste, smoked paprika, and oregano. Cook for 1 minute.
  5. 5Add shrimp and cook until pink and opaque, about 3-5 minutes.
  6. 6Pour in chicken broth and bring to a simmer.
  7. 7Add cauliflower rice, salt, and pepper. Stir well.
  8. 8Cover and cook until cauliflower rice is tender, about 5-7 minutes.
  9. 9Garnish with fresh cilantro before serving.
