Ingredients

  • 1.5 lbs Pork tenderloin
  • 2 each Apples
  • 0.5 each Red onion
  • 1/4 cup Apple cider vinegar
  • 2 tablespoons Brown sugar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Olive oil
  • 1/4 cup Dried cranberries
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Season the pork tenderloin with salt and pepper.
  3. 3Heat olive oil in an oven-safe skillet over medium-high heat.
  4. 4Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
  5. 5Transfer the skillet to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  6. 6While the pork is roasting, prepare the apple chutney. Dice the apples and red onion.
  7. 7In a saucepan, combine diced apples, red onion, apple cider vinegar, brown sugar, Dijon mustard, and dried cranberries.
  8. 8Bring to a simmer over medium heat and cook for 15-20 minutes, or until the apples are tender and the chutney has thickened.
  9. 9Let the pork rest for 5 minutes before slicing. Serve with the apple chutney.
