Ingredients

  • 1.5 lbs Pork Belly
  • 1 large Onion
  • 1 medium Red Bell Pepper
  • 2 small Green Chilies
  • 1 tbsp minced Ginger
  • 2 tbsp Lemon Juice
  • 2 tbsp Coconut Aminos
  • 2 tbsp Mayonnaise (soy-free)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Boil pork belly until tender (about 45 minutes). Let cool, then chop finely.
  2. 2In a large skillet, sauté onion, red bell pepper, ginger, and green chilies until softened.
  3. 3Add chopped pork belly to the skillet and cook until slightly crispy.
  4. 4Stir in lemon juice, coconut aminos, and soy-free mayonnaise.
  5. 5Season with salt and pepper to taste.
