Ingredients

  • 1.5 lbs Pork belly
  • 8 cups Water
  • 3 tbsp Tamarind paste
  • 1 medium Onion
  • 2 medium Tomatoes
  • 1 large Eggplant
  • 1 cup Long beans
  • 1/2 cup Radishes
  • 2 cups Kangkong (water spinach)
  • 2 tbsp Fish sauce
  • 2 optional Green chilies

Instructions

  1. 1In a large pot, combine pork belly and water. Bring to a boil, then reduce heat and simmer for 45 minutes, or until pork is tender.
  2. 2Add onion and tomatoes to the pot and simmer for another 10 minutes.
  3. 3Stir in tamarind paste and fish sauce.
  4. 4Add eggplant, long beans, and radishes. Cook for 5 minutes.
  5. 5Add kangkong and green chilies (if using). Cook until kangkong is wilted.
  6. 6Serve hot.
