- 4Add the 1 cup of radishes, cut into 1/2-inch thick rounds, the 1 cup of long beans, trimmed and cut into 2-inch pieces, and the medium eggplant, cut into 1-inch cubes. Continue to simmer for 10 to 15 minutes, or until all the vegetables are tender but not mushy.
- 5Add the 4 oz of rice noodles and the 2 cups of spinach to the pot. Cook for 3 to 5 minutes more, stirring gently, until the rice noodles are soft and the spinach has wilted.
