Pork-Free Longganisa Breakfast Bowls

A healthier take on longganisa using ground turkey or chicken, seasoned with traditional spices and served over rice with a side of pickled vegetables.

Ingredients

  • 1 lb Ground turkey or chicken
  • 2 tbsp Soy sauce
  • 2 tbsp Brown sugar
  • 4 cloves Garlic, minced
  • 1 tsp Paprika
  • 1/2 tsp Ground black pepper
  • 1/2 tsp Annatto powder (optional, for color)
  • 1 tbsp Vegetable oil
  • 4 cups Cooked rice
  • 1 cup Atchara (pickled papaya)
  • 1 tsp Sriracha (optional)

Instructions

  1. 1In a large bowl, combine 1 lb ground turkey or chicken, 2 tbsp soy sauce, 2 tbsp brown sugar, 4 cloves minced garlic, 1 tsp paprika, 1/2 tsp ground black pepper, and 1/2 tsp annatto powder (if using). Mix everything together with your hands until it is evenly combined.
  2. 2Heat 1 tbsp vegetable oil in a 12-inch skillet over medium heat (350°F / 175°C).
  3. 3Add the seasoned ground turkey or chicken to the hot skillet. Cook for 15-20 minutes, breaking up the meat with a spoon as it cooks, until it is browned all over and no pink remains. The internal temperature should reach 165°F (74°C).
  4. 4Divide 4 cups of cooked rice evenly among four bowls.
  5. 5Spoon the cooked ground turkey or chicken mixture over the rice in each bowl.
  6. 6Place 1 cup of atchara (pickled papaya) on the side of the meat in each bowl.
  7. 7If desired, add 1 tsp Sriracha to each bowl.
