Pork Bistek Tagalog

Thin slices of pork marinated in soy sauce, lemon juice, garlic, and onions, then pan-fried to perfection. A flavorful and dairy-free Filipino favorite.

Ingredients

  • 1.5 lbs Pork loin
  • 1/4 cup Soy sauce
  • 1/4 cup Lemon juice
  • 4 cloves Garlic
  • 2 Onion
  • 1/2 tsp Black pepper
  • 2 tbsp Cooking oil

Instructions

  1. 1Prepare the marinade: In a medium bowl, combine the 1/4 cup soy sauce, 1/4 cup lemon juice, 4 minced cloves of garlic, and 1/2 teaspoon black pepper. Add the 1.5 lbs pork loin, sliced thinly, to the bowl. Stir to make sure all the pork slices are coated in the marinade. Cover the bowl and let it marinate for at least 30 minutes at room temperature.
  2. 2Prepare the onions: Peel and thinly slice the 2 onions. Set them aside.
  3. 3Cook the onions: Heat 1 tablespoon of the 2 tablespoons of cooking oil in a 12-inch skillet over medium-high heat (about 400°F or 200°C). Add the sliced onions and cook, stirring occasionally, until they are softened and translucent, about 5-7 minutes. Remove the cooked onions from the skillet and place them in a separate bowl. Set them aside.
  4. 4Cook the pork: Add the remaining 1 tablespoon of cooking oil to the same skillet over medium-high heat (about 400°F or 200°C). Carefully add the marinated pork slices in a single layer, working in batches if necessary to avoid overcrowding the pan. Cook for 3-5 minutes per side, until the pork is browned and cooked through. The internal temperature should reach 145°F (63°C).
  5. 5Combine and finish: Return the cooked onions to the skillet with the pork. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld and the onions to heat through.
  6. 6Serve: Remove the skillet from the heat. Serve the Pork Bistek Tagalog hot, ideally with steamed rice.
