Ingredients

  • 2 pounds Potatoes
  • 1 medium Onion
  • 1 tablespoon Egg Replacer
  • 2 tablespoons All-Purpose Flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1/2 cup Vegetable Oil

Instructions

  1. 1Peel and grate the potatoes and onion using a box grater.
  2. 2Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible.
  3. 3In a bowl, combine the squeezed potatoes and onion with the egg replacer, flour, salt, and pepper. Mix well.
  4. 4Heat vegetable oil in a large skillet over medium heat.
  5. 5Drop spoonfuls of the potato mixture into the hot oil and flatten slightly.
  6. 6Fry for 3-4 minutes per side, or until golden brown and crispy.
  7. 7Serve hot with applesauce or vegan sour cream (optional).
