Polish Crepes with Apple-Cinnamon Filling (Naleśniki z Jabłkami)

Ingredients

  • 1 cup All-Purpose Flour
  • 1.5 cups Dairy-Free Milk (Oat Milk)
  • 2 Eggs
  • 1 tablespoon Sugar
  • 0.25 teaspoon Salt
  • 2 tablespoons Sunflower Oil
  • 3 medium Apples
  • 1 teaspoon Cinnamon
  • 2 tablespoons Sugar

Instructions

  1. 1In a large bowl, whisk together the 1 cup of All-Purpose Flour, 1.5 cups of Dairy-Free Milk (Oat Milk), 2 Eggs, 1 tablespoon Sugar, and 0.25 teaspoon Salt until the batter is completely smooth. Add the 2 tablespoons of Sunflower Oil to the batter and whisk again until it is fully incorporated.
  2. 2Let the batter rest for 15 minutes. This allows the flour to fully hydrate, which will make your crepes tender.
  3. 3While the batter rests, prepare the apple filling. Peel, remove the core from, and chop the 3 medium Apples into small pieces. Place the chopped apples in a skillet with the 1 teaspoon Cinnamon and 2 tablespoons Sugar. Cook over medium heat, stirring occasionally, for about 10 minutes, or until the apples are softened and slightly caramelized. Remove from heat and set aside.
  4. 4Heat a 10-inch non-stick crepe pan or skillet over medium heat until a drop of water sizzles and evaporates quickly. Lightly grease the pan with a tiny bit of sunflower oil if needed, though a good non-stick pan may not require it.
  5. 5Pour about 1/4 cup of the rested batter onto the hot pan. Immediately tilt and swirl the pan to spread the batter into a thin, even circle covering the bottom. Cook for 2 to 3 minutes, or until the edges start to lift and the bottom is a light golden brown.
  6. 6Carefully flip the crepe using a thin spatula. Cook the other side for another 1 to 2 minutes, until it is also golden brown. Slide the finished crepe onto a plate and repeat with the remaining batter, adding a tiny bit more oil to the pan between crepes if they start to stick.
  7. 7To serve, spoon a portion of the warm apple-cinnamon filling onto the center of each crepe. Fold the crepe in half, then in half again to form a triangle, or simply roll it up.
