Ingredients

  • 1 cup Polenta
  • 4 cups Water
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 1/2 cup Mayonnaise
  • 1 clove Garlic
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh chives
  • 1 teaspoon Lemon juice

Instructions

  1. 1Bring water and salt to a boil in a saucepan. Gradually whisk in the polenta and cook over low heat, stirring constantly, until thickened (about 20-25 minutes).
  2. 2Pour the polenta into a greased baking dish and let it cool completely. Once cooled, cut into fries.
  3. 3Heat olive oil in a large skillet over medium-high heat. Add the polenta fries and cook until golden brown and crispy on all sides.
  4. 4In a small bowl, combine mayonnaise, minced garlic, chopped parsley, chopped chives, and lemon juice.
  5. 5Serve the polenta fries with the herb aioli.
