Ingredients

  • 2 lbs Sweet potatoes
  • 1/2 cup Water
  • 1/2 teaspoon Sea salt

Instructions

  1. 1Wash and peel the 2 lbs of sweet potatoes. Cut them into 1-inch cubes.
  2. 2Place the 1-inch cubes of sweet potato into a large heavy-bottomed pot. Add the 1/2 cup of water. Bring the water to a boil over high heat, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the sweet potato cubes are very tender when pierced with a fork.
  3. 3Carefully drain the cooked sweet potatoes. Transfer the tender sweet potato cubes to a food processor or blender.
  4. 4Add 1/2 cup of water to the food processor or blender with the sweet potatoes. Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed. Add more water, a tablespoon at a time, if needed to reach your desired poi consistency.
  5. 5Add the 1/2 teaspoon of sea salt to the blended sweet potato mixture. Blend briefly to combine.
  6. 6Serve the Poi 'Uala warm or chilled.
