Ingredients

  • 1 cup Poi
  • 1 cup Glutinous Rice Flour (Mochiko)
  • 1/4 cup Granulated Sugar
  • 1/2 cup Coconut Milk
  • 2 cups Vegetable Oil (for frying)

Instructions

  1. 1In a large bowl, add the 1 cup of Poi, 1 cup of Glutinous Rice Flour (Mochiko), and 1/4 cup of Granulated Sugar. Pour in the 1/2 cup of Coconut Milk and mix everything together with a spoon or your hands until a smooth, cohesive dough forms.
  2. 2Pour the 2 cups of Vegetable Oil into a large, heavy-bottomed pot. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  3. 3Carefully drop small spoonfuls of the dough into the hot oil. Do not overcrowd the pot; fry in batches if necessary for 3 to 4 minutes, turning occasionally, until the poi mochi bites are golden brown and crispy on all sides and have puffed up slightly.
  4. 4Using a slotted spoon, carefully remove the fried poi mochi bites from the hot oil. Place them onto a plate lined with paper towels to drain any excess oil, then serve them warm.
