Poha (Flattened Rice)
A light and flavorful breakfast made with flattened rice, onions, potatoes, and spices. A Maharashtrian favorite, perfect for a quick and easy morning meal. Can be adjusted to be more or less spicy.
Ingredients
- 2 cups Poha (flattened rice)
- 1 cup Water
- 2 tablespoons Vegetable oil
- 1 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- 1/4 teaspoon Turmeric powder
- 1/2 cup Chopped onion
- 1 teaspoon Chopped green chilies
- 1/2 cup Potato (diced)
- 1 teaspoon Salt
- 1 tablespoon Lemon juice
- 2 tablespoons Chopped cilantro
Instructions
- 1Place the 2 cups of Poha (flattened rice) in a fine-mesh sieve. Gently rinse them under cool running water for about 30 seconds, just enough to lightly moisten them. Let the rinsed poha sit in the sieve for 5 minutes to allow them to soften.
- 2Place a 10-inch skillet over medium heat (350°F / 175°C). Add the 2 tablespoons of Vegetable oil. Once the oil is shimmering, add the 1 teaspoon of Mustard seeds and the 1/2 teaspoon of Cumin seeds. Cook for about 30 seconds, or until the mustard seeds begin to pop and the cumin seeds are fragrant.
- 3Add the 1/2 cup of Chopped onion and the 1 teaspoon of Chopped green chilies to the skillet. Cook, stirring frequently, for 3-4 minutes, or until the onions look soft and slightly see-through.
- 4Add the 1/2 cup of Potato (diced) and the 1/4 teaspoon of Turmeric powder to the skillet. Stir everything together well and cook for 8-10 minutes, stirring occasionally, until the diced potato pieces are tender when pierced with a fork.
- 5Add the softened 2 cups of Poha (flattened rice) and the 1 teaspoon of Salt to the skillet. Gently mix everything together, being careful not to break the poha too much, until the poha is evenly coated with the spices and vegetables.
- 6Continue to cook for another 2-3 minutes, stirring gently and occasionally, until the poha is heated through and has absorbed the flavors. The poha should be soft but not mushy.
- 7Remove the skillet from the heat. Drizzle the 1 tablespoon of Lemon juice over the poha and sprinkle with the 2 tablespoons of Chopped cilantro. Gently toss to combine.
- 8Serve the Poha immediately while it is hot.
