Pão de Queijo (Cheese Bread - SHELLFISH-FREE)

Ingredients

  • 2 cups Tapioca flour (also called tapioca starch)
  • 1 cup Milk
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1.5 cups Minas cheese, grated (or mozzarella)
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Salt

Instructions

  1. 1Preheat oven: Preheat oven to 375°F (190°C).
  2. 2Combine wet ingredients: In a saucepan, combine milk and vegetable oil. Bring to a simmer over medium heat.
  3. 3Mix dry ingredients: In a large bowl, place the tapioca flour.
  4. 4Scald tapioca flour: Pour the hot milk and oil mixture over the tapioca flour and stir vigorously until the flour is completely absorbed. The mixture will be thick and sticky.
  5. 5Cool slightly: Let the mixture cool slightly for about 5 minutes.
  6. 6Add eggs: Add the eggs one at a time, mixing well after each addition. The mixture will be smooth and elastic.
  7. 7Add cheese: Stir in the Minas cheese (or mozzarella) and Parmesan cheese. Season with salt.
  8. 8Bake: Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  9. 9Bake: Bake for 20-25 minutes, or until golden brown and puffed up.
  10. 10Serve: Serve warm.
